Spinach Ravioli floating on an Italian sauce.
Ingredients:
for the fillings
about 450 grams of spinach (chopped)
1tbs grainy mustard
1 teaspoon sesame oil
1/2 teaspoon nutmeg
2tbs bread crumbs
pinch of salt
for the Raviolis
1 cup semolina flour
2tsp olive oil (u can also use normal oil)
1/2 cup water
pinch of salt
for the sauce
2-3 crushed tomatoes
1 onion (chopped)
1 tbs oil
1 clove garlic (chopped)
salt and pepper to taste
dash of lemon
pinch of cayenne pepper (red chilli powder)
Method:
for the ravioli dough
mix all the ingredients as told above for the raviolis
prepare a dough and wrap it in a towel and let it set for 30min
for the filling
wash the spinach
place it in a large mixing bowl
add grainy mustard,bread crumbs and salt mix it well
for seasoning ass cayenne pepper(chilli powder) and pepper
for the sauce
saute the chopped onions in oil until it turns golden brown
add the chopped garlic and saute with it
add the crushed tomatoes and reduce the heat to medium
add the lemon juice( 3 to 4 drops) salt.pepper and stir on low heat
season to taste with additional salt,pepper ans cayenne if needed
Making the Ravioli
1. divide the dough in to fourths and roll out each portion like rotis and make sure to roll it thin
2. cut it into your desired shape and place the filling inside it and cover it with the top part of the ravioli and close ends with the fork and cut the extra with knife
3. meanwhile bring a large vessel filled with water and a pinch of salt in it
4. put your raviolis in it and allow it to boil, they are ready when they come floating to the top. Cook only few at a time.
5. when ready put a layer of sauce on a plate and place the ravioli on top of that.
6. you can also use some cheese for decorating in in last.
